Raspberry and cherry ice cream cake enriched with collagen
Ingredients:
Base:
- 210g almonds
- 200g dates
- 1 tbsp coconut flakes
Ice cream:
- 200g Collagen edition raspberry’n’ cherry ice cream powder
- 300ml Friendly Vikings oat drink
Icing:
- 200ml oat cream
Decoration:
- Dried cornflowers
- Blueberries
Recipe:
First, mix the ice cream powder with the Friendly Vikings oat drink in a bowl and place in the freezer for 1,5h.
Prepare the base – crush the ingredients in a food processor and blend until smooth. Press the mixture into the cake tin. Place in the fridge to chill.
Remove the ice cream mixture from freezer and whip for a few minutes until light and fluffy. After pouring onto the base, freeze for at least three hours or overnight.
Decorate with whipped cream, flowers and berries before serving.
