Healthy and colourful pasha
Ingredients:
- 1,2 kg (lactose-free) curd paste.
- 200ml coconut cream
- 100 ml agave syrup
- 3 egg yolks
- 1 tsp vanilla extract
- 1 grated orange zest
- Squeezed juice of half a lemon
- 50g crushed almonds
- Be More superfood mixes (for decoration)
Recipe:
1. Place the curd, agave syrup, vanilla extract, orange zest, lemon juice and crushed almonds in a bowl and mix.
2. Whisk the egg yolks in another bowl and stir into the curd mixture.
3. Whip 100ml coconut cream and mix into the curd.
4. Line the inside of a tight sieve with meringue, place the sieve over the bowl and pour the pasha dough over the top so that the sieve is full. Fold the edges of the gauze, place the weight on top and place the pasha in the fridge to drain overnight.
5. Turn the pasha out onto the serving dish.
Whip 100ml of coconut cream and decorate the top with your choice of cream, berries, nuts and superfood mix.
