Gingerbread cookies with superfood enriched glaze
Ingredients:
Gingerbread:
- 250g of flour
- 125g of brown sugar
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- 1/2 t invert
- 125 g of butter
- 2 tbsp plant-based drink
- 2 tablespoons of honey
Icing:
Recipe:
Mix the dry ingredients: flour, sugar, baking powder, cinnamon powder and ginger powder. Add honey, butter (cut into small pieces) and plant-based drink. Mix and knead with your hands until a smooth dough is formed. If the dough is too sticky, feel free to add more flour. Cover the dough with plastic wrap and put it in the refrigerator for at least 30 minutes (it should be cold when you roll the dough). At the same time, heat the oven to 180°C.
To make the glaze, mix powdered sugar with lemon juice and add a superfood mix to get the desired color on the glaze. Roll out the dough on a floured surface and cut out the gingerbread cookies with the molds. Place them on a baking sheet and bake in the oven for about 10 minutes. Gingerbread cookies are quite soft when taken out of the oven, but harden as they cool, so let them cool completely before eating or decorating.
