Light summer salad for Midsummer that is hearty, fresh and perfect next to the barbecue or enjoying on its own!☀️🍉🥗

Ingredients:

medium sweet potato
red onion
fresh cucumber
cherry tomatoes
soft white cheese (e.g. feta or goat cheese)
arugula
baby spinach
1–2 tbsp Be More Peeled hemp seeds
2–3 tbsp Walnut seed mix
Lemon juice (freshly squeezed)
Pomegranate syrup
Salt, pepper, paprika

Preparation:

Peel and chop the sweet potato. Boil in lightly salted water until soft but not falling apart (about 10–12 min).
Place the sweet potato pieces in a pan, fry lightly, season with salt, pepper and paprika.
At the same time, chop the red onion, cucumber and cherry tomatoes.
Place the arugula, baby spinach and all the chopped ingredients on a serving platter. Add the fried sweet potato.
Sprinkle with soft white cheese.
Sprinkle with hemp seeds and a mixture of seeds.
To finish, drizzle with lemon juice and pomegranate syrup.
