Chanterelle salad
Ingredients:
- 2 handfuls of fresh chanterelles
- Arugula (handful)
- 1 tbsp balsamic dressing
- Cherry tomatoes (handful)
- 1 tbsp red onion
- Pumpkin (baked, about 50 g)
- 1 clove of garlic
- 1 tbsp Be More Superfoods peeled hemp seeds
- 10 slices of yellow paprika
- Handful of carrot chips
Preparation:
1. Clean and fry the chanterelles until they are golden brown. Add salt and pepper.
2. Cook the pumpkin until it becomes soft and add garlic, salt, pepper and paprika.
3. Add arugula, cherry tomatoes, onion, baked pumpkin, paprika slices, carrot chips and chanterelles to the plate.
4. Add balsamic sauce on top and sprinkle with peeled hemp seeds.
Serve now!
