Estonia’s birthday blueberry muffins
Festive but healthier bite for our beloved Estonia’s birthday!
Dry part:
- 200 g oat flour
- 2 handfuls of crushed almonds
- 1 tsp baking powder
- 0.5 tsp cinnamon
- pinch of salt
- 2 tbsp Be Sporty protein mix
Liquid part:
- 1 ripe banana
- 1 egg
- 2 tbsp Greek yogurt
- 1 tbsp honey
- 80 ml milk
Blue whipped cream:
- 150 ml oat cream
- 1 tbsp blue spirulina mix
- 0.5 tsp vanilla extract
- Mix dry ingredients together.
- In another bowl, mash the banana and mix in the egg, yogurt, honey and milk. Mix the dry part and liquid part together. Add blueberries and gently fold them into the batter. Divide batter into molds and bake at 200C for ~18 min.
- Whip the cream until stiff, add spirulina and vanilla. Decorate the muffins and sprinkle with coconut flakes.
