Gingerbread cookies
Did you know that you can make the perfect gingerbread icing at home with just three ingredients?✨
👉🏻All you need is powdered sugar, your favorite superfood powder, and a dash of lemon juice.
Put the powdered sugar and your chosen powder in a bowl, add a little lemon juice, and mix until you have a smooth, even mixture.
For an especially intense color effect, use blue spirulina powder to create a beautiful, natural, and eye-catching icing.
Gingerbread recipe:
- 250g flour
- 125g brown sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ginger
- 125g butter
- 2 tbsp plant-based drink
- 2 tbsp honey
❅Mix the dry ingredients: flour, sugar, baking powder, cinnamon powder and ginger powder.
❅Add honey, butter (cut into small pieces) and plant-based drink. Mix and knead with your hands until you have a smooth dough.
If it is too sticky feel free to add more flour.
❅Cover the dough with plastic wrap and put it in the refrigerator for at least 30 minutes (it should be cold when rolling the dough). In the meantime, preheat the oven to 180°C.
❅ To make the glaze, mix the icing sugar with lemon juice and add the superfood mixture to give the glaze the desired color.
❅Roll out the dough on a floured surface and cut out gingerbread cookies with molds.
❅Place them on a baking sheet and bake in the oven for about 10 minutes.
❅The gingerbread cookies are quite soft when you take them out of the oven, but they will harden as they cool, so let them cool completely before eating or decorating.
